I completed my BS in Nutrition and Food Science from Colorado State University in 2007 followed by a Masters in Food and Nutrition Services from the University of Mississippi in 2011. After my Masters I joined the faculty of Biomedical Science Department at the College of Nursing in Kuwait to teach applied nutrition classes for student nurses. I worked and developed a healthy campus initiative at the College of Nursing in Kuwait. My employer granted me a scholarship to pursue a PhD degree and I started at the University of Leeds as a post graduate researcher in November 2018.
I am interested in examining the interaction between diet, health, and the environment, in particular, the environmental determinants of dietary choices. Also, I am interested in effective and practical tools to promote healthy dietary behaviours among families with children. My doctoral research is about food practices in relation to children’s eating behaviours in a Kuwaiti household. It focuses on exploring the impact of the physical and social environment on children’s dietary intake and food choices. The research has a mixed method design involving collecting both qualitative and quantitative data. Part of the project is to develop an Arabic version of Myfood24 online tool that will be used to collect children’s dietary intake. Ultimately, my research aims to help develop suitable dietary interventions and effective nutrition policies, therefore I am keen to examine the food culture in the Kuwaiti household.
