Dr Jin Chu
I am currently a postdoctoral research fellow in food biopolymers. I am interested in understanding the role of cell wall polymers in determining food quality/ food safety, and developing effective and innovative ways for food waste recycling.
I have extensive experiment (9 years) in industrially-oriented research projects. Design and Propose research projects in science level aiming to solve commercial problems. I have a background of food biochemistry during my PhD, and obtained extensive knowledge in Food microbiology and New Product Development during the 4 years working at University of Lincoln (National Center for Food Manufacturing). My current focus of interest is to understand the cell wall pectin structure and composition of mandarin, in order to improve the recycling yield for the food industry, Also develop innovative packaging product with the pectin waste to increase the shelf life for high-risk food products.
