Dr. Yashaswini Premjit

Profile

I am currently a postdoctoral research fellow at the University of Leeds, working on an Innovate UK project (AdvanceYeastProt) under the supervision of Dr. Célia Ferreira. This project focuses on advancing sustainable technologies with scaffold design and upcycling vegetable side streams for creating a structured protein-rich product. My present role allows me to collaborate with interdisciplinary experts and industry stakeholders to push the boundaries of alternative proteins.
Prior to this, I completed my Ph.D. at the Indian Institute of Technology (IIT) Kharagpur, India, as a DST-INSPIRE Fellow. My doctoral research was centred on enhancing the survival of probiotic microorganisms under in vitro gastrointestinal conditions for incorporation in functional foods. I developed different encapsulation techniques (matrix-based and hydrogel-based systems) and worked on various characterisation techniques for the probiotic microcapsules and encapsulation structures. Alongside my research, I am passionate about teaching and mentoring, with brief experience as a guest lecturer at Davangere University, India.
