- Thesis title: Solubilisation, fragmentation and precipitation of colloidal particles of cellulose as stabilising agents in foods
- Supervisor: Professor Brent S. Murray, Dr Mike Ries
Profile
I studied Chemistry at the University of York as an MChem degree, with a final year abroad in France. I carried out my Masters project at the CEA-Grenoble as part of the Universite Grenoble Alpes, working in the Laboratoire Chimie et Biologie des Métaux (LCBM) under the supervision of Olivier Seneque.
Research interests
I am currently working on solubilisation and regeneration of cellulose as a potential ampiphilic emulsion stabiliser, under the guidance of Professor Brent Murray and Dr Mike Ries. Dry bulking or water droplet stabilisation using non-derivatised cellulose could provide an interesting method for fat replacement in confectionary.
