Victoria Richardson RNutr

Profile

I am a nutrition scientist, Study Nutritionist and Research Assistant with expertise in dietary behaviour change and weight management interventions. I hold an MSc in Nutrition Science and Practice from South Bank University and was awarded the dissertation prize for academic excellence. My postgraduate research used qualitative methods to examine mindful eating practice against emerging evidence, reflecting my broader interest in theory informed, evidence based nutrition interventions.
At the University of Leeds, I work on the UKRI funded EMBED clinical research study examining the biological, psychological and behavioural drivers of appetite and energy balance. My role involves delivering very low energy diet (VLED) interventions, providing nutritional and behavioural support to participants, supporting recruitment, contributing to study design and protocol development, and writing and assisting with NHS ethics submissions. I have experience integrating physiological, psychological and behavioural data within human trials.
