Profile
I am PhD student in School of Food Science & Nutrition, University of Leeds. I completed my undergraduate studies in major of Food Engineering (top 10%) at Zhejiang Gongshang University, China. Then, I pursued my Master degree in the major of Food Security at University of Edinburgh, United Kingdom. After graduating with my Master degree, I worked as an assistant engineer at Songshan Lake Materials Lab, China.
Research interests
I fouces on utilising novel, green, and food-grade protein extraction technologies to extract protein from coconut kernel. I also study the emulsifying properties of a specific protein from coconut and its ability to encapsulate bioactive compounds and to reveal the underlying potential reasons through food physics and food chemistry.
