I joined the School of Food Science and Nutrition, at the University of Leeds for PhD in 2020. I hold a Master’s degree in Nutritional Sciences at the University of Nottingham in 2019. During my postgraduate study, I undertook a research project investigating the role of isocitrate dehydrogenase and phosphoserine aminotransferase in muscle growth, with chicken as a model.

Research interests

I am currently working on bioactive peptides released form chia (Salvia hispanica L.) protein fraction with in vitro analysis, investigating its bioactivity and bioaccessbility, under the guidance of  Dr. Alan Javier Hernandez Alvarez and Professor Francisco M. Goycoolea.
