Profile

BSc (UTFPR), MSc (UNICAMP), and Ph.D. candidate (UNICAMP) in Food Engineering and MSc (IPB-Portugal) in Food Quality and Safety. My research relies mainly on the use of micro/nanoencapsulation techniques to protect and deliver bioactive compounds and on the incorporation of carrier systems into food matrices. Recently, I've been redirecting efforts on the study and application of plant proteins as stabilizers of dispersed systems, as well as on the improvement of their funciotechnological properties by complexation with phenolic compounds.
