Profile
I hold a PhD in Food Engineering and am currently a postdoctoral research fellow at the University of Leeds, School of Food Science and Nutrition. My expertise lies in plant polyphenols, particularly anthocyanins, with a focus on their identification using LC-MS/MS, enhancing their bioaccessibility through microencapsulation, and determining their fate during in vitro gastrointestinal digestion and colonic fermentation, including their impact on gut microbiota. My research also explores food matrix interactions and the valorisation of food processing by-products. I am now working on the Sustainable Nutrition for Animal Protein Productivity (SNAPP) project under the guidance of Assoc. Prof. Dr Christine Bösch, which we aim to evaluate the gut health and health benefits of added phytochemicals to the diet of pigs during the post-weaning period.
