My background is in Food Science and Technology and I have been teaching in higher education for more than15 years. Prior to my appointment as Lecturer in Food processing in the School of Food Science and Nutrition, I was an Assistant Professor at the Viana do Castelo Polytechnic Institute in Portugal for 7 years, where I taught courses in Food Engineering. I have had a keen interest in Food Science Education, since my involvement in the ISEKI-FOOD network in 2005 and have been the Principal investigator for the University of Leeds and project task leader for seven EU-funded projects. I have been an active member of the ISEKI-FOOD Association for more than 10 years and I am responsible for the Food Careers initiative and in pioneering the development of the ISEKI-FOOD Association (IFA) Accreditation and certification scheme. I have published my research into Knowledge and Skills requirements for graduates in the food industry and I am researching alternative methods for objective peer assessment and assignment double marking. I was made a fellow of the ISEKI-FOOD Academy in 2016 for contributions made to the food science profession.
As programme manager of the MSc in Food Quality and Innovation, I was responsible for its conception and development. While teaching sensory science, food processing and product development in Portugal, I realised that the knowledge and practical skills needed for working in food product development can be more effectively obtained if learners are placed in a teaching environment that can simulate aspects of working in the food industry.
The MSc in Food Quality and Innovation is unique, as it is one of the only programmes in Food Science and Nutrition in the UK, that has been specifically designed using a Project-led Education pedagogy. The programme is designed around a team-based product development project, which requires the integration of knowledge and skills in sensory science, experimental design, statistical analysis, product design, food processing, marketing, consumer science, food safety and quality.
