Apple cider vinegar could help lower blood sugar

Dr Christine Bosch spoke to the Guardian about whether consuming more vinegar could help with insulin resistance.
The article asked ‘Is it true that … apple cider vinegar can stop blood sugar spikes?’
It explains how frequent spikes in blood sugar can contribute to insulin resistance, which could develop into type 2 diabetes.
Dr Christine Bosch said that the suggestion that vinegar, and other acidic foods, could help to prevent insulin resistance has some truth to it.
“We know that acidic foods can affect the enzyme amylase, which breaks down carbohydrates into sugar in our mouths,” she said. “This enzyme is pH-dependent – when you consume something acidic, it becomes less active.”
