Dr Sally Moore

Profile

I am a Registered Dietitian (Health Professions Council) and a Registered Nutritionist (Public Health) (Association for Nutrition).

Following my first degree in genetics, I worked at the University of Edinburgh in a research laboratory investigating the genetics of the malaria parasite, where I became interested in the nutrition-related aspects of human diseases. I moved into nutrition by firstly completing the MMedSci Human Nutrition programme at the University of Sheffield, then undertaking clinical training in dietetics in the NHS as a postgraduate student at Leeds Beckett University.

From 2007, I have worked with the UK food industry. I began by leading the first nutrition policy team at Morrisons Supermarkets PLC where my team undertook product portfolio evaluation, menu and nutrition labelling, salt reduction, and healthier product reformulation. From 2014, I worked as a lecturer and senior lecturer in Nutrition and Food whilst completing my PhD evaluating the impact of front-of-pack nutrition labels and new EU/UK legislation on consumers.

My leadership includes Programme Leadership for the School’s MSci and BSc Nutrition degrees. Between 2019 and 2023, I chaired the British Dietetic Association’s Public Health Nutrition Specialist Group.

Research interests

Vision: to improve people’s food and nutrition via policy, practice, and products.

Current research areas include consumer engagement with nutrition labelling, food legislation and public health nutrition, initiatives, and policy, in both the in-store and digital food environments.

Research and knowledge transfer projects include collaborations with people from diverse backgrounds and the third sector, members of the public, industry, and health professionals (i.e. the British Dietetics Association and Heart Research UK).

I have previously received BBSRC ORIC funding to conduct research in Partnership with Ocado Retail Ltd (2023-24) (the “Finding Healthy Online” study) and ESRC Impact Accleration account funding to work on gamification of Nutrition Label Education with the Fit Food Software Company in Berlin, Germany (2020).

I have received EU Research and Development (Yorkshire Innovation Fund) funding to lead an industrial partnership research project which involved healthcare professionals and an international nutritional supplement manufacturer (2015).

I was awarded a Research England Policy Research Support grant (2022) to lead a project addressing health and nutrition inequalities in Leeds:

  • I use a variety of quantitative and qualitative methods to explore areas such as the impact of nutrition labelling legislation and information (i.e. traffic lights) on consumers, such as surveys and eye-tracking together with members of the public and collaborators
  • My team reveals the current status of various food environments (i.e. supermarket stores, websites) using product-level evaluation with traffic lights, HFSS, and other parameters of product healthfulness.
  • I lead research to innovate nutrition label education (i.e. via gamification of learning)
  • Dietetic Professional Practice, including in food insecurity
  • Culturally sensitive healthier eating practices and recipe resources.
