The project looks at the mouthfeel perception of liquid and semi-solid food samples using instrumental techniques such as tribology science and surface adsorption science.Tribology and surface adsorption measurements provide invaluable insight into mouthfeel and sensory attributes of food and hence can predict the consumer acceptance rate of a food product.
